Southwestern Black Bean Bake

Ingredients
5 Cups cooked brown rice1 can black beans, rinsed and drained1 can pinto beans, rinsed and drained1 can rotel1 Cup salsa4 scallions, chopped1 Cup corn1.5 C low fat cheddar cheesegreen olives (optional)1 Cup sour cream
Directions
Mix all above ingredients except cheese together. Top with shredded cheese. Place in a 9X13 baking dish and cook at 375 for 30-40 minutes. Makes 8 servings
