Quick Banana Loaf

Ingredients

1/2 cup margarine1/2 cup sugar (you can experiment with using less)2 eggs3 ripe bananas, mashed2 cups flour1 teaspoon baking soda1 teaspoon baking powder1/2 teaspoon salt1 teaspoon cinnamon
1 loaf = 16 slices
Preheat oven to 350F.
Cream together margarine and sugar until fluffy. Add eggs, one at a time, mixing well after each one. Stir in bananas.
In a large bowl combine flour, baking soda, baking powder, cinnamon and salt.
Add banana mixture TO flour mixture, stirring just until combined. DO NOT OVER MIX. Pour into a greased and floured loaf pan.
Bake at 350F for 1 hour, or until toothpick inserted in center comes out clean.
Let cool in pans for about 10 minutes. Remove from pans and cool completely before cutting.
If you are freezing this, either freeze whole, or if slicing then place wax paper between slices.
**you can stir in 1/2 cup chopped walnuts before pouring in pan, this would change the nutritional information.
