Donna's Zucchini Bake

5 cups Zucchini, sliced or cubed1/2 cup fresh Okra, sliced1 quart stewed tomatoes1 cup Four Cheese Mexican Blend fancy shredded cheese1 tsp. Salt1 tsp. Black Pepper1 Tbsp. Oregano1 tsp. Minced Onion1 tsp. Minced Garlic
Preheat oven to 350.
Cube Zucchini and boil in boiling water for 4 minutes.
Drain. Slice Okra and add to Zucchini.
Spray baking dish with Pam and line bottom with the Zucchini and Okra mixture. Sprinkle with Salt, Pepper, Minced Onion, Minced Garlic and Oregano. Cover with cheese. Top with Stewed Tomatoes, cover and bake for 35 minutes or until heated through.
Makes about 12 servings. Half cup servings.
