Semi-Steamed Broccoli

1 head of broccoli, with the stem1 tablespoon of buttersalt and pepper to tastewater
First, trim the florets from the stem of the broccoli.
Next, using a mandolin or v-slicer, slice the stem of the broccoli into 1/4 inch thick slices.
Arrange the stems at the bottom of a sauce pan and add water just enough to barely cover the stems, usually 1/4 to 1/2 a cup.
Add the butter to the water and then add the florets on top.
Cook over medium-high heat until broccoli is done, about 5 to 10 minutes.
Serve, using the cooking water with butter as a sauce. Season as desired with salt and pepper.
Broccoli florets should be dark green and retain some firmness to them when bitten. Do not over cook as this will damage the flavor and may discolor the vegetables.
