Sinigang with Pork Ribs

Ingredients
1 lb green beans, 21 oz spinach, 3-4 roma tomatoes (about 12 oz), 1 large onion (17 oz), 10 cloves of garlic (2 oz), 3 tbsp olive oil, 3 lbs pork ribs and one 40 g packet of tamarind soup base.
Directions
(1) Chop tomatoes, onions and garlic.
(2) Add 3 tbsp olive oil to large pot
(3) Add onions and garlic -- cook for 2-3 minutes
(4) Add tomatoes -- cook another 2-3 minutes
(5) Add pork and tamarind packet
(6) Add 1/4 cup (Filipino) fish sauce
(7) Add 2 cups of water, stir, then add another 5 cups of water
(8) Allow contents to come to a boil on high heat
(9) When it reaches a roiling boil, reduce heat to medium
(10) Cover pot and cook for 1 hour
(11) Add green beans and jalapenos -- cook another 15 minutes
(13) Add spinach -- cook another 15 minutes

Makes about 10 pounds of soup.
