Olive Couscous Salad

1.25 cup whole wheat couscous – prepared with 2tbs olive oil 224g chicken breast cooked & shredded112g green sweet pepper - cut in 0.5”matchsticks 168g tomatoes - chopped168g cucumber –peeled & chopped112g carrots – finely grated1 onion – finely chopped120g black olives – olives chopped in halfdressing ingredients below1.5 tbs olive oil1.5 tbs balsamic vinegarblack pepper.25 tsp salt2 clove garlic - finely chopped or gratedhot saucejuice 1 lime
Make as directed on packaging couscous allow to cool. Mix together the chopped tomatoes, peppers, cucumber, carrots, onions, chicken & olives in large bowl. Stir in the couscous until fully mixed. Make dressing add all ingredients for dressing in bottle or cup, mix well & pour over couscous mixture & stir in well. Chill salad in refrigerator – to allow flavors to develop best eaten 3hrs to 12 hrs later.
Makes 14 - 1cup servings
Note: chicken can be omitted or substituted for fish. Can also add cilantro or other herbs to the finished salad before chilling.
