Brown Rice, Red Rice & Barley Pilaf

Ingredients
2 Tbsp. Olive Oil1 small onion, chopped1 cup assorted mushrooms, chopped1/2 c. brown rice1/2 c. Bhutanese red rice1/2 c. pearl barley3 cups Vegetable broth
Directions
makes 5 1/2 cup servings

Heat olive oil & saute onions & mushrooms until soft in saute pan with cover. Add grains & saute until coated with oil. Add broth, bring to gentle simmer and boil until grains are soft (25 - 30 minutes). Add additional broth as needed.
