Lemon Muffins

Ingredients
2 cups Champion standard flour1 cup sugar2 heaped t-spoons baking powder1 t-spoon saltZest of 3 - 4 lemons100g butter (melted)Juice of 3 - 4 lemons2 eggs
Directions
Get the oven warmed up to about 160C. Grease your muffin tray.

Mix togethger the dry ingredients and the lemon zest in one bowl. Squeeze the lemons and then make up the liquid to a little more than 1 cup with water (if you need to). Pour that into a second bowl with the melted butter and eggs. Beat the combo till it's good and frothy.

Chuck the wet into the dry and fold it all through until JUST combined.

Bake for around 30 minutes but check at 25 to make sure they're okay.

These are good with either a dusting of icing sugar or some runny lemon icing drizzled over the top.
