6 Chicken Thighs - Skin and Bone ON1 Leek - Sliced300g Raw Cauliflower100ml Double Cream200ml Stock (made with 1 Knoor Chicken Cube and 100ml boiling water)1 TBSP Mild Curry Powder (I used Sainsburys)2 TBSP Ghee
Makes 3 Servings Approx (2 thighs per serving)
1 - Add Ghee to large frying pan with lid.
2 - Add Thighs, skin side down once hot and brown, turn over and brown otherside for approx 5 mins.
3 - Add Leek and stir.
4 - Add Curry Powder. Stir.
5 - Add Stock and stir. Cover and cook for 10 mins.
6 - Add Cauliflower, Cover and cook for 10 mins (stir occasiomnally to ensure even coverage for cauli).
7 - Add Cream and cook uncovered for 10-15 mins, stirring occasionally.
Serve in warm bowls! MMMM!
