Mary's Bread (honey-wheat bread)

Ingredients
4 cups warm water1 cup honey1 Tbsp. yeast3/4 cup canola oil1 Tbsp. saltabout 5-6 cups whole wheat flourabout 5-6 cups white flour
Directions
Makes 4 loaves, about 12 slices each

Put warm water and honey in a large bowl. Stir in yeast and then let sit until foamy, about 5 mintues.

Mix in salt and canola oil.

Stir in about 3 cups of wheat flour and 3 cups of white flour; mix until smooth. Continue adding flours, one cup of each type at a time, until it makes a soft dough. Cover bowl tightly and let rise until doubled in bulk, about 1 hour.

Punch down dough. Place dough onto a lightly floured surface (white flour) and knead 5 - 10 minutes. Shape into four loaves.

Place loaves in bread pans sprayed with cooking spray. Let rise until the tops of the loaves reach the tops of the pans.

Place in a cold oven. Turn oven to 350 and bake for 35 to 40 minutes. Remove loaves to a wire baking rack. Cool for 30 minutes, or for as long as you can resist hot, fresh bread. :)
