Spaghetti with Courgette, Mushroom & Garlic

300g wholewheat spaghetti (uncooked weight)3 smallish courgettes, sliced into ribbons using a potato peeler3 cloves garlic, sliced1 small onion, finely sliced150g mushrooms, finely sliced2 tbsp olive oil
Whilst the pasta is cooking;
Heat the oil in a fry pan, add the onions and cook for a few minutes until starting to soften, add the garlic, then add the courgewttes and mushrooms and continue to cook until everything is tender, but still has some 'bite'.
Drain the spaghetti when it is cooked to 'al dente', add the courgette and mushroom mixture, season to taste and then toss gently to evenly distribute everything.
Serve immediately, sprinkled with parmesan if desired, adding the extra calories for the parmesan.
