Ingredients
Cooking Spray3 oz. whole-wheat spaghetti or angel hair (or 1 cup or more leftover pasta - I recommend more if it's cooked)1/2 pound lean ground turkey or sirloin1/2 cup broccoli puree1 large egg white2 tablespoons grated Parmesan2 cloves of garlic, chopped (or equivalent)2 cups natural tomato sauce (less if you're using leftover pasta)1 cup lowfat cottage cheese1/4 cup carrot puree1/2 teaspon salt1/4 teaspoon pepper1 cup shredded part-skim mozzarella cheeseItalian herbsOnion
Directions
Preheat oven to 350 degrees. Spray 9-inch pie plate with cooking spray. Cook pasta if not using leftovers. In a small bowl, mix the ground turkey or sirloin with the broccoli puree, egg white, Parmesan, and garlic. Form the mixture into 1/2-inch balls. In a large bowl, sitr the cooked pasta, tomato sauce, cottage cheese, carrot puree, and salt and pepper. Spoon the mixture into the pie plate and smooth the top. Scatter meatballs on top and sprinkle with mozzarella. Bake, uncovered, until the center is firm and the cheese is bubbly, 25-30 minutes (may take longer).
