Zucchini Mini Quiche Muffins

Ingredients
4 Cups Grated Zucchini1 Cup Bisquick1/2 Cup finely chopped onion1/2 Cup grated parmesan cheese2 T snipped parsley (optional)1 tsp salt1/2 tsp italian seasoning (oregano, marjoram)1/8 tsp garlic powderDash of pepper1/2 Cup Vegetable oil4 eggs (slightly beaten)
Directions
Mix bisquick, eggs and vegetable oil till mix is absorbed. Add all other ingredients and mix. Spoon into greased mini muffin pans. Bake at 350 for 35 - 45 minutes until golden brown. Makes 48 mini muffins.
