6 large green peppers2 hot italian turkey sausage links2 sweet Italian turkey sausage links1 cup long grain brown rice (already cooked)1 medium onion chopped3 garlic cloves chopped1 15 oz jar salsa or so
Preheat oven to 350. Cut top off green peppers and remove inards. Cook peppers in boiling water for 4-5 minutes. Drain and cool. Brown turkey sausage, onions and garlic. Add rice and 1 cup of salsa. Stuff each pepper with sausage mixture. Place in a baking dish which will hold 6 peppers upright and can be covered. Spray that container with nonstick spray. Place peppers in baking dish. cover with 1 cup of salsa. Cover and bake 45 minutes. Uncover, bake 15 minutes.
