Healthier Banana Bread with Flax and Wheat Germ

* *Flour, white, 1 cup * Wheat germ, crude, .75 cup * **Flax Seed Meal (ground flax), 4 tbsp * Granulated Sugar, .67 cup * Baking Powder, 2 tsp * Baking Soda, .5 tsp * Salt, .25 tsp * Banana, fresh, 1 cup, mashed * Butter, unsalted, .333 cup * Milk, nonfat, 2 TBS * Egg, fresh, 2 large * Pecans, .25 cup, chopped
In large mixer bowl, combine flour, sugar, flax seed, wheat germ , salt, baking powder and baking soda. Add mashed banana, butter, and milk, Beat on low till blended, then on high for 2 minutes. Add eggs and beat till blended. Stir in nuts.
Pour batter into a greased 8x4x2 inch loaf pan. Bake in a 350 degree oven for 55 to 60 minutes or till a toothpick inserted near the center comes out clean. cool for 10 minutes on a wire rack. Remove from the pan; cool thoroughly on a wire rack. Wrap and store overnight before slicing.
