Great Northern Bean Soup

Ingredients
2 cups dry great northern beans, rinsed and drained.2 cups extra lean ham, chopped into bite size pieces1 cup onion, chopped1 cup carrots, grated1/2 tsp sea salt2 tbsp dried chives6 to 8 cups of water
Directions
Rinse and drain 2 cups of great northern beans. Add to a large pot and fill with water (about 6 cups). Bring beans to a boil and remove from heat. Put lid on pot, leaving it cracked so heat can escape. Allow to sit untouched for at least one hour.

Re-rinse and drain beans. Add beans back to pot and add 6 to 8 cups of fresh water. Cook beans over low to medium heat for 2 to 2-1/2 hours, stirring occassionally. During last hour of cook time, add ham, carrots, onions, salt and chives.

Serve with homemade biscuits or cornbread.

Recipe Yields: approximately 9 - 1 cup servings

*You can omit sea salt in this recipe, if you are watching your sodium intake. It lowers the amount to 601.2 mg vs. 733.7 (132.5 mg savings)
