Quinoa Tabouli Salad

Ingredients
* Quinoa 1 Cup Uncooked, 1 cup (remove) * Water, tap, 2 cup (8 fl oz) (remove) * Cucumber (peeled), 1 large (8-1/4" long) (remove) * Scallions, raw, 3 medium (4-1/8" long) (remove) * Lime Juice, 1 lime yields (remove) * Olive Oil, 1 tbsp (remove) * Salt, 2 tsp (remove) * *mint leave, 3 tbsp (remove) * Parsley, 2 tbsp (remove) *Garlic 1 clove chopped (remove)
Directions
Cook Quinoa according to directions and refrigerate till cool.. Chop cucumber and scallions and add to quinoa along with the rest of the ingredients. Makes a great main course or side dish.

    My family loves this meal. It is now one of my daughter's new "comfort" foods. It also is perfect for my husband who has Celiac's disease. I also add chopped fresh tomatoes & I substitute cilantro for the mint. So yummy! - 2/20/11
