Ingredients
Ingredients:Egg, fresh, 6 extra large Egg white, 3 egg whitesHam, extra lean, (5% fat), 1/2 cup, diced Spinach, chopped fresh, 1 cup Artichokes, frozen, 1/2 cupCheddar or Colby Cheese, Low Fat, 1 cup, shredded Sour Cream, 1 tbsp Pam Spray to "grease" muffin tin
Directions
Whisk eggs together with 1 tbsp of lite or fat free sour cream, add chopped spinach, artichoke hearts, chopped ham and shredded chesse. Pour into muffin pan that is lined with muffin cups or sprayed with pam. Bake at 350 for 20 to 25 minutes until golden brown/ Makes 12 quiche muffins

    Great recipe, good to make ahead for morning rush before work. Using egg beaters would help with high cholesterol level though. Otherwise, delicious - 1/16/10
