Zucchini Bake

Ingredients
5 eggs2/3 cup cooking oil1 tbsp. parsley flakes3/4 tsp. salt1/4 tsp. pepper2/3 cup grated parmesan cheese1 1/4 cups chopped onion3 3/4 cups grated zucchini1 1/4 cups tea biscuit mix
Directions
Beat eggs in mixing bowl until frothy. Mix in cooking oil, parsley, salt and pepper.

Stir in remaining ingredients in order given. Pour into shallow greased 9 inch casserole. Bake in 350 oven for about 35 minutes. Serve hot. Makes 8 servings.
