Cream of cauliflower soup

Ingredients
1 whole large head of cauliflower1 medium chopped onion1 cup of celery chopped2 15 ounce cans of fat free chicken broth1/2 tsp ground coriander1/2 tsp saltpepper to taste2 tbsp olive oil1 /4 cup non fat dry milk
Directions
Saute onion and celery in olive oil until translucent. Add cauliflower and coriander and cook for two minutes. Add broth and bring to boil. Add salt and pepper. Simmer for two minutes. Add non fat dry mik. Remove from heat and allow to cool for five minutes. Use hand held blender to emulsify. Serve hot.
