Walnut Blueberry Banana Bread

Ingredients
1 ripe banana, mashed3/4 c. ground flaxseed2 egg whites1/3 c. agave 1 c. nonfat buttermilk1 tsp baking sode1/2 tsp sea salt3/4 c. whole wheat flour3/4 c. spelt flour1 tsp orange rind, grated1 c. blueberries1/2 c chopped walnuts
Directions
1. Preheat oven to 375. Spray a loaf pan with cooking spray.

2. In a large bowk, combine banana, flaxseed, egg whites, agave and buttermilk. In a separate bowl, mix baking soda, salt, flours and orange rind.

3. Combine dry ingredients into banana mixture. Gently fold in blueberries and walnuts.

4. Pour mixture into loaf pan and bake for 40 minutes.

    I found it a bit heavy for my taste but that is the issue when using wheat mixes without any white (just a taste I need to develop). Made it as mini-muffins so I could better track the calories. - 1/24/10
