Veggie Fried Rice

Ingredients
1 1/2 c. edamame, shelled1/2 c. frozen corn2 c. chopped broccoli7 baby carrots, chopped1/4 onion, chopped1 c. spinach, sliced thin2 c. cooked brown rice1 egg2 egg whites1/2 tsp grated ginger root4 tbsp soy sauce2 tsp sesame oil1/2 tbsp sesame seeds
Directions
1. Place all veggies, except spinach, in a bowl and cover with plastic wrap. Microwave for a couple min until soft.

2. Heat a lg nonstick skillet on med high heat and spray w/ cooking spray. Add veggies and rice, stir until warm.

3. Place egg and egg whites in a bowl and lightly beat. Make a well in center of rice in the pan and add the eggs. Scramble and incorporate into the rice.

4. Add ginger, soy sauce and sesame oil. Stir in. At last minute, add spinach and stir until it wilts.

    I skipped the corn, added a dash of 5 spice blend, and added frozen peas and scallion at the very end cooking until the peas unthaw. (if you cook the peas with the other veggies they turn to mush) Loved it :) - 10/3/09
