4 ZUCCHINI1 & 1/2 C SHEDDED MOZZARELLA1 C FAT FREE RICOTTA3 T PARMESAN CHEESE3/4 C EGG SUB.1/2 C MILK1/2 TSP SALTGARLIC POWDERDASH PEPPER3/4 TSP DRIED BASILDASH PAPRIKA
SLICE ZUCCHINNI THINLY & SAUTE WITH GARLIC POWDER OR FRESH GARLIC IN EVOO OR PAM AND A BIT OF WATER.
IN A BOWL MIX RICOTTA, EGG SUB., 1 C OF THE MOZZARELLA, MILK, 2 TBSP OF PARMESAN, SALT & PEPPER.
PLACE 3/4 OF THE SAUTEED ZUCCHINI IN THE BOTTOM OF AN 8" X 8" PAN, SPRAYED WITH PAM. POUR CHEESE MIXTURE EVENLY ON TOP. SPRINKLE WITH RESERVED 1/2 C MOZZARELLA AND 1 T PARMESAN CHEESE. SPRINKLE PAPRIKA AND BAKE FOR 30 MINUTES IN 350 DEGREE OVEN.
LET COOL THEN CUT INTO 6 SERVINGS.
OPTIONS:
ADD A LAYER OF SLICED TOMATOES ON TOP PRIOR TO LAYERING THE RESERVED MOZZARELLA AND PARMESAN.
ADD CHOPPED ONIONS TO THE ZUCCHINI WHILE SAUTEING.
ADD SLICED MUSHROOMS TO SAUTE.

I made this tonight and it was very good! I added mushrooms, garlic and onion to the saute, and I substituted FF cottage cheese for the ricotta. I had to bake it at least 20 minutes longer than the directions said to, but it may have been my additions. Overall it was very good and flavorful! - 7/17/07

This is a great recipe liked by my family. I did the additions of onions and tomatoes. We took it on our picnic. I had to bake it a bit longer. It is delicious and could be used for a brunch, lunch, dinner, breakfast...very versatile. Thanks for sharing this recipe; it's a keeper! - 3/24/08
