Wheatena Muffins

Ingredients
WHEATENA, dry, 3 cup1 cup boiling waterOlive Oil, .5 cupGranulated Sugar, 1 1/2 cupEgg substitute, liquid (Egg Beaters) 1 1/2 cupFlour, white, 2 1/2 cupBaking Soda, 2 1/2 tsp Buttermilk, lowfat, 2 cup
Directions
Pour wheatena into a large bow. Pour boiling water over cereal, mix until well blended. Let stand. Combine oil, sugar, eggs, buttermilk in another large bowl. Stir in wheatena cereal mixture. Sift flour, soda, and salt together and add to other ingredients and mix well. Fill greased muffin cups 2/3 full. Bake at 400 for 15-20 min or until tests done. Makes 2 dozen.
