Hodgson Mill Tasty Corn Bread Muffins

Ingredients
1 1/2 c. Hodgson Mill White Corn Meal1 c. White Whole Wheat Flour1 1/2 tsp. Baking Powder1/3 tsp. Baking Soda1/3 c. Demerara Sugar1/2 tsp. Salt1 c. Milk w/ 1 Tbsp Vinegar (Buttermilk)1 Egg, beaten1/4 c. Canola Oil
Directions
Preheat oven to 400 degrees. Grease muffin tin w/cooking spray. Place all dry ingredients in a medium size mixing bowl and blend well. Add Milk(buttermilk), egg, and oil. Stir just until moistened.

Spoon into muffin tins, fill 3/4 full.

Bake 15-20 min. until golden brown.

Yield: 12 muffins

    I made this with generic yellow cornmeal since that is what I had and they turned out wonderful. Love that there are no mixes or unusual ingredients (I use white whole wheat flour in place of all purpose now). Will definately make again. - 9/1/10
