Carrot Pineapple Bread

Ingredients
1 3/4 cups flour2 tsp baking power1 tsp baking soda1 tsp cinnamon1/4 tsp salt1/4 tsp nutmeg1 cup brown sugar, packed1/4 c canola oil1/4 c applesauce1 egg1 egg white1 tsp vanilla3/4 c carrots, shredded8 oz of crushed pineapple, 1/4 c juice reserved, rest drained2/3 c. grape nuts
Directions
Preheat oven to 350. Combine first six ingredients and set aside. In small bowl, whisk together brown sugar, oil, applesauce, egg, egg white, and vanilla and reserved juice. Stir in carrots, pineapple, and grapenuts. Prepare a loaf pan and pour batter in. Bake for 45 minutes or until a toothpick comes out clean. Cool on wire rack.
