Mince with vegetables

500g Beef mince, extra lean 2 tbls Extra virgin, olive oil1 medium onion, chopped3 cloves garlic, chopped1 medium carrot, chopped (small pieces)1 zuccini, sliced1/2 sweet red capsicum, chopped2 large portabello mushrooms, chopped1 700g bottle of passatta (Italian cooking sauce)2 beef stock cubes2 cups water3 tspns chilli powderSalt & pepper to taste
Heat 1 tablespoon of olive oil in a large pot, add onion, garlic, carrot, zuccini and red capscium, cook for a few minutes stirring regularly until softened. Remove from pan.
Heat the remaining olive oil in pan and add mince, cook until browned. Return vegetables to pan and continue to cook for another 5 minutes, stirring continually.
Add passatta and the stock cubes mixed with the water to the pan, stir. Add mushrooms and continue cooking futher until mushrooms are cooked. Add chilli power, salt and pepper and let simmer until vegetables are cooked through.
Serves 6.
