One Dish Chicken Mushroom Casserole

Ingredients
1 whole chicken breast quartered, no skin or bone(4 pieces)I can cream of chicken soup1 can chicken broth fat-free 3/4 cup white rice2 cups fresh mushrooms, sliced1/3 cup shredded cheddar cheese
Directions
Mix everything together except the cheese in a 10x10 square pan, placing the chicken on top.
Bake at 350 degrees for 45 minutes.
Sprinkle the cheddar on top and return to the oven for 5 minutes.

    This is super easy, and yummy! I have made it several times, and if you want to supsitute brown rice, just let it soak for 1/2 hour in the broth before cooking, so it gets all the way done. I also sprinkle paprika and italian seasoning on the chicken. - 9/21/11
