2 Point Banana Nut Muffins

3 bananas, overripe, mashed1 tsp. vanilla1 egg1/3 cup unsweetened applesauce1 Tbsp. olive oil1/2 cup Splenda1 cup flour1/2 cup oatmeal (I used quick oats)1 tsp. baking powder1 tsp. baking soda1/2 tsp. salt1 tsp. cinnamon1/4 cup chopped walnuts
Preheat oven to 350. Line muffin pan with Pam or paper liners (I use paper liners sprayed with Pam).
In medium bowl, mash bananas.
Add vanilla, egg, applesauce, olive oil, Splenda. Mix well.
In separate bowl, mix flour, oatmeal, baking powder, baking soda, salt, and cinnamon. Stir til mixed.
Add dry ingredients to wet ingredients. Stir til mixed. Fold in walnuts.
Spoon batter evenly into 12 muffin cups. Bake at 350 for 25 minutes or until toothpick comes out clean.
