Ingredients
Cupcake:1 Cup Sugar1/2 Cup Unsalted Butter2 Med Eggs2 Tsp Vanilla Extract1/2 Cup Flour1/2 Cup Milk1-3/4 Tsp Baking Powder1/2 Cup crushed drained pineappleFrosting:1 cup Unsalted Butter3 tbsp coconut milk3 ups powdered SugarBlue Food coloringBlue and White sugar sprinkles to garnish
Directions
Makes 24 ea Blue Hawaii Cupcakes.
Set oven to 350
Cream sugar and butter until fluffy.
Add in eggs and vanilla.
Add in dry ingredients.
Add in pineapple.
Fill cupcake cups 3/4 full and bafe for 30 minutes.

For frosting:
Butter at room temp food processor until creamy add in coconut milk and spoon in the powdered sugar until creamy and stiff. Add in food coloring. Pipe onto cooled cupcake.

    These did not come out as expected. The recipe only filled 12 liners, not 24 and sunk in the middle. I will try again with more flour as suggested by other rater. - 2/3/13

    I had the same problem as the person with the othter comment however i added an extra 3/4 cup of flour and so that made the total flour 1 1/4 cup and it turned out great I bet she ment 1 1/2 cups in the recipe. Once the flour was corrected they were wonduful. - 9/25/10

    Mine didn't turn out just right. The cupcakes came out mushy and didn't seem to have enough flour. Will try again with more flour - 8/1/10
