Eggless Egg Salad

Ingredients
1 box of soft tofu - smashed1 rib of celery - finely chopped1/4 white onion - finelyl chopped1/2 T sweet pickle relish1 T light Miracle whip or light Mayonaise (your choice) 1/2 T turmeric1/2 tsp. celery seedsalt and pepper to tasteCombine all ingredients and then refrigerate if you want to for about an hour. It looks and tastes just like egg salad. It like to serve it on rye bread with lettuce leaves.Jempower
Directions
Smash the tofu, combine all ingredients and let cool in the refrigerator if you have time. Divide into 4ths and then spread 1/4 on a slice of any type of bread and top with another slice of bread (not included in calorie calculator.)
