crustless bacon & egg quiche

8 slices bacon3 eggs1.5 c milk2 Tbsp Margpepper1/2 c shredded cheddar cheese1/2 c ricotta cheese
Spray mini muffin pan cups with pam
line muffin cups with grated cheddar cheese, sprinkle crumbled bacon into each cup
in blender combine eggs, milk bisquick, marg, onion flakes red pepper , ricotta cheese & pepper, blend for 15 seconds
pour egg mixture into prepared pan
ake @350 for 14-18 minutes or until a knife comes out clean. keep an eye on them so that they don't burn.
let cool 10 minutes
can be frozen and reheated in the microwave.
