6 Large Ripe Bananas(8" or more)0.5cup shredded Raw Coconut0.5 cup Cane Sugar0.5cup Cashew Nut Halves5tbsps.Clarified Butter(Ghee)2tsps.Saffron Threads1.5tsp.Cardamom Powder0.5tsp.Nutmeg Powder
PREPARATION
Peel and slice the Bananas(these should be ripe but firm) into thin round slices.Shred the Coconut.Grease the Cashew Nuts with0.25tbsp.Ghee and roast these over a slow flame on a griddle till browned. Roast the shredded Raw Coconut in 0.25tbsp.Ghee on low flame till dry and slightly browned.Mix in the Sugar, roasted Cashew Nuts,Saffron Threads and the Cardamom-Nutmeg Powders thoroughly and set aside.
METHOD
Melt the remaining Ghee in a non-stick wok and reduce flame.Add the sliced Bananas and fry on low flame till golden.Add the roasted Coconut Mixture and gently mix thoroughly together.Cover and steam on low flame till well assimilated.
