Black Bean Lasagne

Ingredients
9 Lasagne noodles1 jar of your favorite spaghetti sauce*1 cup of your favorite salsa (no hotter than medium)2 cups fresh or frozen squash mix (zucchini and yellow squash) chopped in medium pieces1.5 cups assorted bell peppers (or frozen pepper mix) chopped in medium pieces1 cup onion, largely chopped4 cloves garlic, minced1 can diced tomatoes2 cans black beans, rinsed and drained1 tbs extra virgen olive oil1 tsp cayenne pepper----------------------------------------------Cheese Mixture1 package neufchatel cheese, softened1 cup cottage cheese (1%)1/2 cup sour cream2 tbs basil
Directions
Begin boiling a very large pot of water for lasagna noodles.
In a large hot sauce pan, saute garlic, onions, bell peppers, and zucchini until they just begin to soften. (Be sure not to overcook as they will continue to cook in the oven!)
As they cook, mash one can of black beans with a fork and add both cans to the pan.
Add 1 jar of spaghetti sauce, 1 can of tomatoes, salsa and cayenne pepper.
Add noodles to boiling water and boil until softened but not completely done. (about 8 minutes, again they will cook in the oven)
Add spinach to simmering sauce mixture.

As sauce simmers, mix all cheese mixture ingredients.

In a lasagne pan, begin layering ingredients as such:
4 tbs sauce (to prevent sticking)
3 noodles
1/3 sauce
1/3 cheeses
3 noodles
1/3 sauce
1/3 cheeses
3 noodles
1/3 sauce
**reserve remaining 1/3 cheese**

Bake at 350 for an hour, covered with foil.
Remove foil, dollop remaining cheese mixture, and bake uncovered for another 15 minutes.

Let stand at least 10 minutes, then serve and enjoy!

    As a plus when I did a varitaion of this for 8 servings - I got a pound of food for <400 cal. I do think the that calories listed are off, so I recalculated for my own slightly modified version (added mushrooms, etc). Also, please note that the cream cheese package is only suppose to be 3 oz. - 1/18/11

    Yum!!! Absolutely wonderful! I also missed the spinach and will try that version next time, but it was great anway - my friend went back for 3 servings!!! This is my new favorite recipe for the fall! - 10/10/07

    This recipe was so delicious! I made it a second time with 1/2 as much cayenne so it wasn't as spicey. Spinach isn't listed in the ingredients, however, so I didn't add it to the sauce as told to in the directions. It was great without it so it really didn't matter. Both extremely healthy and tasty! - 9/16/07
