Blue Cheese Potatoes (Slow Cooker)

Ingredients
2 lbs Red Potatoes1 1/4 cups Scallions, divided1 Tbsp Olive Oil, divided1 Tbsp Vegetable Broth, divided1 tsp dried Basil1/2 tsp Salt1/4 tsp black pepper, black1/4 cup Reduced Fat Blue Cheese
Directions
Layer potatoes, 1 cup scallions, 1/2 Tbsp olive oil, 1/2 Tbsp vegetable broth, basil, salt & pepper in slow cooker. Cover: cook on LOW for 7 hours or HIGH for 4 hours.

Turn slow cooker to HIGH. Gently stir in cheese and remaining oil & vegetable broth. Cook 5 minutes longer to allow flavor to blend. Transfer to serving platter and top with remaining 1/4 cup scallions.

    You can also cook these in the oven, using a casserole at 375F for 60 minutes. Double the liquid to allow for greater evaporation. - 3/29/11
