Scalloped Eggplant

Ingredients
1/2 Cup of chopped onion1 clove of garlic minced1/2 Green Bell Pepper chopped1 Can Of Hunt's Diced Tomatoes w/ Basil,oregano, & garlic ( or plain diced tomatoes per taste)3 tsp sugar ( to help cut acidity of tomatoes)salt & pepper to tasteMrs Dash Italian seasoning to taste2 Cups Cubed Eggplant
Directions
Heat Olive Oil in a large pan
Add Garlic,Onion & Pepper and Saute'
Add Tomato,Sugar, Spices
Add Eggplant
Bring to a boil
Stir well,lower heat
Cover and simmer for 25 minutes
stirring occasionally

Serves 4 ~~1 cup servings
