Cream of Broccoli Soup

2 cups broccoli, cut into florets and steamed 2 cups chicken broth (or more for thinning )1 clove garlic, minced1/4 cup onion, chopped1/4 cup heavy cream Kosher Salt and White Pepper to taste
Yields: Approximately 6 - 1/2 cup servings
1. Steam broccoli in microwave for approximately 4 minutes or until al dente.
2. Heat pot and add olive oil. Saute onions for several minutes on medium-high heat until tender. Add garlic and saute for 1 minute.
3. Place steamed broccoli in a blender and blend until pureed. 4. Transfer puree to a pot and add chicken broth and heavy cream.
5. Season with salt and pepper, to taste.
