Grilled Peppers

Ingredients
4 peppers (green, red, yellow, orange)2 Tbspn Extra Virgin Olive Oil1/2 tsp Salt1/4 tsp Pepper1/4 cup loosely packed fresh parsley, chopped
Directions
1 - Preheat grill to medium.

2 - Cut each pepper lengthwise into quarters; discard stems and seeds. In gallon size ziplock bag, place peppers, oil, salt, & pepper. Seal bag and shake until well coated.

3 - Place peppers w/ skin side up on hot grill. Cover grill and cook 4-5 minutes or until they begin to soften. Turn peppers over; cover and cook 3-4 minutes longer. Remove from heat into bowl, add parsley and toss.
