Chicken Cacciatore

Ingredients
Chicken, cut into parts1 onion2 cups shitake mushrooms6 cloves garlic4 Tbsp butter2 tsp basil1 tsp bay leaf1 tsp black peppersalt to taste2 (6 oz.) cans tomato paste1 cup white wine2 oz brandy
Directions
Cut chicken into parts, boil in a large cooking pot until cooked (20 minutes). Simultaneously saute butter, onion, garlic and shitake mushrooms in a separate pan. When chicken is cooked, pour off water, add sauted mixture to chicken together with white wine, brandy, tomato paste, basil, bay leaf, pepper, salt. Cook on low for 15 minutes to allow the ingredients to mix thoroughly. Enjoy.

    I made my chicken cacciatore this way except I omitted the butter, I used olive oil and omitted the brandy. - 6/19/15
