Zesty Chicken with Corn Salsa

Chili powder, 2 tsp Brown Sugar, 2 tsp Cumin (ground), 1 tsp Boneless, Skinless Chicken Breast, 4 (about 1.25 pounds)Olive Oil, 2 tbsp Whole Kernel Sweet Corn, 7 oz. canSmall Red Bell Pepper, 1/2 choppedCucumber (with peel), 1/2 small cuke dicedBeans, red kidney, 1/2 cup, rinsed and drainedLime Juice, 3 TbspSalt, 1/4 tsp
In cup, combine chili powder, brown sugar, and cumin. Rub both sides of chicken breasts with the spice mixture.
In large skillet, heat oil over medium heat. Cook chicken in hot oil 12 minutes, turning occasionally, or until instant-read thermometer inserted in the thickest portion reads 160 degrees Farenheit and juices run clear.
Meanwhile, in medium bowl, stir together corn, red pepper, cucumber, kidney beans, lime juice, and salt.
Evenly divide corn salsa onto 4 plates. Top each with a chicken breast.
Serves 4.
