Potato Soup

Ingredients
Red Potatoes (4-6)Diced Onions, Celery, & Green Pepper (I use Incredible Fresh Trinity Mix, 1/2 package)1 cup skim milk3 tbsp whole wheat flour1 tbsp parsleySalt/pepper to taste
Directions
Peel potatoes and cut into bite-sized chunks. Place in a medium-sized pot. Add onions, celery, and green pepper, and mix together. Cover with water and boil. Meanwhile, combine milk and flour. When potatoes are fork-tender, turn down to LOW heat and add milk/flour mixture, parsley, salt, and pepper. Let thicken on low, stirring occasionally. Makes four servings (1 serving is about 1 cup).
