Sugar Free Quinoa Pudding

Ingredients
3/4 cup uncooked Quinoa1 1/2 cup water2 cups nonfat milk, divided1/3 cup Splenda1 egg2 t vanilla2 T Country Crock Shed Spread Light
Directions
Bring the Quinoa and water to a boil, cover and reduce heat, cook for 25 minutes or until Quinoa is soft and fluffy.

Stir 1 1/2 cup milk and sugar into the Quinoa and cook until thick and creamy, about 20 minutes.

In a separate bowl mix 1/2 cup of the milk and egg. Stir into Quinoa mixture for two more minutes. Finally stir in the buttery spread and vanilla.

Delicious hot or cold!
