Erica's Beef & 4 Bean Chili (Low fat, High Fiber)

Ingredients
16oz 93% Lean Ground Beef1-15oz can Kroger Kidney Beans (Dark Red)1-15oz can Kroger Black Beans1-15oz can Kroger Pinto Beans1-15oz can Kroger Red Beans2-14.5oz can Kroger peeled diced tomatoes (no salt)1.5 cups (about a large) Onions, raw2 large stalks Celery, raw2.5 tbsp Chili powder (or to taste, we like a lot so it's a little spicy)1 tsp Black Pepper
Directions
Brown beef, onion, and celery in bottom of soup pan. Add all ingredients to pot after beef is browned. Bring to a boil and stir often. Turn down to medium-low heat and let simmer for at least an hour, stirring often. Salt and pepper to taste (additional pepper and salt are not figured into calorie count).

Makes roughly 14-1 cup servings (I think, I'm experimenting tonight to make sure, lol).

    Great Chili! So glad I found your recipe. I added yellow pepper and also oregano, basil, and hot sauce. I wouldn't say it's hot at all, but still delicious! - 9/7/09
