Erica's Sour Cream Apple Streusel Cake (Low Fat, High Fiber)

Ingredients
Cake:1 cup Unbleached All Purpose Flour1/2 cup Whole Wheat Pastry Flour2 tsp Baking Powder1/2 tsp Baking Soda1/4 tsp Salt1 cup Fat Free Sour Cream1 large Egg, fresh1 large Egg white, fresh2 large Apple3/4 cup Granulated SugarStreusel Topping:2/3 cup Bob's Red Mill Extra Thick Rolled Oats Whole Grain1/4 cup Brown Sugar (packed)2 tbsp Butter, salted
Directions
Preheat oven to 350 degrees.
Combine dry ingredients in large bowl.
Beat egg, egg whites, and sour cream in small bowl.
Peel and slice apple into thin bite size pieces.
Add wet ingredients and apple pieces to dry ingredients and mix well.
Spoon into 11x7 in pan and spread dough to corners.

In small bowl mix oats, brown sugar, and butter with fork until crumbly.
Pour strausel over cake evenly.

Bake at 350F for about 30 minutes or until center is done (knife comes out clean from center).
Cut into 10 pieces.

Note: Cake and streusel could be made with artificial sweetner and margarine, but I am allergic to both, therefore the recipe is written with regular sugar and butter.
