Last MInute Southwestern Corn

Ingredients
2 cups frozen corn kernels (do not thaw)1 tbsp butter (olive or vegetable oil would probably work too)1 tsp chili powder1 tsp ground cumin1 tsp garlic powder1 tsp salt1 tsp ground black pepper(The spices can be adjusted to your taste)
Directions
Melt butter in medium skillet over medium-high heat.

When butter is melted, stir all spices into melted butter.

Add frozen corn.

Stir corn to cover it in the melted butter and spices, and cook over medium-high heat, stirring occasionally, until all the water from the frozen corn evaporates. Continue to cook corn until it's hot, and begins to brown a little. (Total cooking time is approx. 10 minutes)

Serve.

Makes 4 1/2-cup servings.

    Perfect way to use up some fresh corn and feed a crowd. I used 11 cobs for 10 people. Didn't add much more spices as this crowd of folks aren't much for trying anything new and someone else said it was a bit spicy for their taste. All agreed it was very good! - 10/2/11

    Very tasty! I left out the salt and used only 1/2 tsp. black pepper. I thought the spices were still a bit too sharp, however. Next time I will cut back on the garlic and chili powder just a little. This would also be good with some pre-chopped onion and bell pepper added that I keep frozen. - 8/17/09
