Scotch Broth

Ingredients
1.29 lbs Stew Meat16 Cups Water4oz which is about 3/4 cups pearl barley (before Cooking)4oz of Dried Green Peas4 Carrots1 Large Onion3 Leeks1 small Turnip1 small CabbageFresh Parsley1/4 cup of Canola Oil
Directions
Over a medium heat brown the stew meet in a soup pot. Add the vegetables as you cut them up. Let the vegetables sweat as they call it. Cook them for a little while, about 20 mintues on low heat. Then add your water and season with salt and pepper and cook till tender, about an hour. Makes 32 1cup servings.
