1 can of Hatch Chilies8 oz. package Monterey Pepper Jack Cheese1/4 cup whole wheat flour4 large eggs1/2 c. whole wheat flour
Slice the cheese into 1/2 oz. sections and place them inside the chilies. Separate the eggs and beat the egg whites until peaks form. Mix the flour and eggs yolks together and fold them into the egg whites. Roll the chilies in 1/2 cup flour and then roll in the egg mixture. Place on a cookie sheet and bake at 400F for 10-15 minutes.
