White Chicken Chili

Ingredients
1 T olive oil2 lbs (32 oz) chicken breasts, boneless and skinless, diced into 1-inch cubes1 onion, diced3 cloves garlic, grated1 t salt1 t ground cumin1/2 t chili powder1/8 t cloves, ground1/8 t cayenne pepper4 (15.5 oz cans) cannellini (white kidney) beans, drained and rinsed28 oz chicken stock, low sodium2 c corn, frozen2 (4 oz cans) green chilis1 lime3/4 c low fat, shredded monterey jack cheese
Directions
Heat oil in a heavy saucepan over medium heat. Add chicken and onion. Cook until chicken is no longer pink, about 5-7 minutes. Add garlic cloves and spices, continue to cook for 1-2 minutes. Add beans and stock. Stir and simmer for 25 minutes. Add corn and green chilis , continue to simmer for 5 minutes. Remove from heat and squeeze lime into chili. Serve with 1 tablespoon of cheese per cup of soup.
If you prefer a thicker chili, puree 1/4 of the soup before you add the corn.

    Excellent recipe, but not thick enough...so I pureed ~2 of the 4 cans of beans with some of the broth to get some needed thickness. I substituted jalapenoes for green chilies (all that had) and doubled the cumin, cayenne, and chili powder. I omitted the cloves. Yummy! - 1/3/10

    Amazing! I added bell pepper with the onions and doubled the spices (except the salt). I followed the suggestion to puree 1/4 of it to get a thicker consistency. It made a huge amount - great for leftovers and it freezes well. I served it with pita chips the first night and cornbread after that. - 10/16/09

    This was a very tasty chicken chili. I made the recipe according to the directions. I found the chili a little bland, so I doubled the spices and garlic. This gave it a nice little kick and just the right seasoning. Easy and delicious and healthy to boot! - 2/2/10

    This was very good! I used ground turkey instead of chicken, and I added a can of tomatoes. I was a little afraid of the cloves, but I put them in anyway. The spices were really good, and the lime makes all the difference! I will definitely be making this again! - 1/19/10

    This was wonderful! It was thick enough for me so I didn't puree it. I did add one frozen pack of spinach and I think it helped thicken it up a bit. I didn't see where it said how much a serving size was, so I guessed that it was a 1 cup??? - 1/28/10

    This was a great soup to make for our first fall like weather in Florida. I did not add the cayenne pepper, I must admit I am a baby for hot spicies. I did thicken the soup and loved it.     At my sister's suggestion I cut the recipe in half for just me and added Green Taco sauce or salsa the kind w/ tomatillos - 4 oz for half the recipe - it is even better after it sits. This is great. (I didn't add any salt - just a little when I served it.) - 2/17/10

    Added one can of chicken broth(instead of 2), ond can of no salt corn(instead of frozen), have bottled chopped garlic always on hand in the frig so a tablespoon of that and bottled jalepenos about 1/4 of a cup for color and heat.

    Very good and filling. I used white northern beans instead. Using the kroger private select organic cans of beans resulted in a bit less sodium. I added 3 T reduced-fat sour cream on top of each serving - Yum. Next time, I'll add something to add a bit more heat to it - a little more cumin (?) - 1/17/10

    Husband and daughter loved it, i made it with vegetable broth and i added Mrs Dash and some poultry seasoning. I used 2 cans of cannelloni beans and 2 cans of the red kidney beans for color. I topped it with cheese, tomatoes, and celery.next time i will use the crock pot with the dried beans - 1/2/10

    Hubby doesn't like spicy foods but he gave this an 8 out of 10 and said he would eat it again. It seemed to make only 8 cups which to my way of thinking is 8 servings and 339 calories per serving. - 2/16/10
