Emril Lagasse Beef Stroganoff Hamburger Dinner in a Skillet

1/2 lb lean ground beef1/2 tsp salt1/4 tsp gr black pepper1/4 Emeril Essence1 tbsp olive oil1/4 cup chopped yellow onion1 cup sliced white button mushrooms1 tsp chpped garlic1/4 lb Barilla ww elbow macaroni2 cups beef broth1/4 cup greek plain yogurt (or sour cream)Grated white Cheddar, optionalchopped parsley, for garnish
Season the beef with salt, peper, and Essence.
In a large cast iron skillet, heat the oil over med heat. Add the seasoned beef and cook, stirring, until well browned and all the pink has disappeared. Drain off any excess oil in the skillet.
Add the onions and cook, stirring, until soft, 3 - 4 min. Add the mushrooms and garlic and cook, stirring until the mushrooms have released their juices, about 2 min.
Add the macaroni, beef broth and yogurt (sour cream). Cook, stirring until the mixture thickens slightly, 5 - 6 mins.
Remove the pan from the heat and spoon the mixture onto 2 large plates, sprinkle each portion with the cheese, if desired, and chopped parsley and serve immediately.
