8 small red potatoes, quartered1 pkg. (16 oz.) baby carrots3 Tbsp. olive oil1 tsp. salt1/4 tsp. black pepper
Place carrots and potatoes on cooking sheet. Sprinkle on olive oil, salt and pepper and toss to coat. Make sure everyting is on one layer. Bake at 400 for 45-50 min.
